SCOTCH PANCAKES

6 ozs. S.R. Flour
1 tsp. Baking powder
1 egg
7 Fl ozs. Milk
1 1/2 ozs. castor sugar (opt)

Mix flour and baking powder, make a well and add egg, gradually stir in milk until mixture is smooth. Leave to stand for a few mins then pour spoonfuls onto a hot non-stick frying pan.
Top with cream cheese and smoked salmon.
